The Leventis family are firmly committed to Organic farming because of the obvious benefits to the environment. Whilst yields are somewhat lower than non-organic farming the quality is substantially higher. For this reason farming at the Strakka Estate is totally organic and no pesticides, herbicides or chemical fertilisers are used. The Estate produces its own compost which is used to nourish the olive trees. The compost is a mixture of sheep manure, olive kernel cake and shredded leaves and branches from pruning. Extra care is taken to ensure that the manure is obtained from sheep reared on natural pastures, which are not fed any processed feed compound. The soil is further nourished through the planting of Leguminous plants between the olive trees, which upon flowering are cut down and incorporated back into the soil
